Makeover of Bad Pad Thai!

I already mentioned I got a terrible Pad Thai from a food truck. There were tough, chewy beef bits, no eggs, peanuts or tasted anything like one! I had to completely makeover this dish by adding Lingham's chili sauce to add some spunk & spice. What with the chewy leg of lamb, overhauled Pad Thai, I was getting anxious. I stir fried a simple side dish of bok choy and red peppers. Turned out quite delish, whew!

Mui Choy Pork, Bok Choy, Toufu with Tiger Beer!

Foodie friends wanted ideas of how to prepare bok choy prompted me to quickly post this. It was quite a big dinner spread, not my usual one dish dinners. My sister and her hubby were visiting, so I made more of an effort.

Whole bok choy were stir fried with garlic and ginger, then added a tad of broth & let steam fry a little. Stir fried a dish of fresh shitake mushrooms, I wanted it to stand on it's own. I had made mui choy pork in a clay pot the night before, so all it needed was warming up & sprinkle scallions on top. The last dish was to provide a protein dish for brother-in-law. Everyone dug into this tasty dish! I stir fried red bell peppers and snow peas and added fried toufu with hoisin sauce. We wolfed all of it, only bit of pork was left. All washed down with ice cold Tiger Beer.

Pork Belly, Soba, Bok Choy

Just sunk my teeth into my first bite of this pork belly, heaven, ummmmm!!!

Mom would be proud, it was one of my dad's favorite Hakka dishes.

Tender but still had texture with all the right flavors, oh forgot to mention the mui choy (preserved mustard greens.) Exactly how I remembered it. I skipped marinating prior to searing, didn't have time, so very pleased it turned out just how I like it!

Can't believe how easy it was to make, it's finding this cut! They don't always have it here in Miami.

Stir fried bok choy, snow peas & grape tomatoes. Already had cold soba. Perfect complement.
