Asian Jerky Pork Omelet

I'm loving Little Red Dot Kitchen's Jerky Pork. The only problem is whenever I'm hungry, it's such a perfect little protein hit, I end up stealing from the stash before I get a chance to use it in a stir fry noodle dish!

My fav is the BBQ Jerky Pork which come in slices. In Asia, we like to warm it up before devouring. Naturally my wok is the best way to do that on low heat.

I had a perfectly ripe, creamy, juicy mango to go with my special Bak Kwa (BBQ Jerky Pork) and some Florida strawberries. Don't you love how mango is presented? So pretty and slurp-ready.

Succulent BBQ Jerky Pork morsels with red sweet mini Peppers and scallion were a wonderful mix in our omelet.

I crave savory when I'm hungry, and these slices are so handy, I just slip into my handbag! There are so MANY ways to enjoy this delightful Asian Jerky Pork, can't wait to use in a noodle dish. Thank you Little Red Dot Kitchen for bringing a bit of Asia to us in America! Visit their site for some outrageous creations with ice cream or macarons??!!! It's freshly made, so get your own stash!

Spicy Vindaloo Breakfast

Spicy Vindaloo leftovers with Methi paratha revs up my morning! Tons to do before I take off to Hong Kong to see my mom.  Growing up, my mom used to serve us curry for breakfast!  She always said curry is better the next day and I so agree, the meat has really absorbed the sauce and even more tasty than last night's Veena's Market Vindaloo with Zucchini Raitha dinner! Uh, hope my hubby doesn't see this, think he was hoping for seconds, oops.

Mother's Day French Toast

Happy Mother's Day to all mothers as well as those of pets, me included! I'm working on a post about my mother and all her accomplishments!!! She was definitely a "Renaissance" woman.

To celebrate Mother's Day, we made French toast. I prep and he fries them in our cast iron wok! Today was the last of Blis Bourbon syrup(his favorite) and Strawberry mojito jam (my favorite), boo.

East Meets West Breakfast

Thai breakfast from yesterday's Songkran Festival: banana wrapped mung bean and sticky rice; pork jerky strips for some protein (definitely more moist when heated); fresh fruit, yum!

Both from Patti, Thai Bayshore, same lady I bought from at Asian Culture Festival. Amazing she recognized me as I arrived at the Wat Buddhist Thai Temple, Miami. Will be posting more about Songkran soon.

New Breakfast Additions, Some Good, Some Uh?

Dr. Oz mentioned hemp seeds was even better than flax seeds! Yeah, but mucho more moola! Think I'll stick to Flax seeds. Tip is to only grind the amount you want to eat fresh. This provides its full nutritional & optimum value.

Coconut milk has no sugar so I was immediately interested in this. Both soy and almond milk have high sugar content. I wish I could've tried some before purchasing this huge carton! Well, not a fan of texture and doesn't taste of coconut at all? Isn't the point of eating is to enjoy? Steel cut oats, coconut milk, fresh fruit, protein powder, roasted almonds, hit of granola.

Breakfast Blis

My hubby & brother-in-law claim you can't have French toast without syrup! Blis bourbon barrel maple syrup from earthy.com is delish, not so icky sweet. It's my hubby's all time fav breakfast. Uh, and he's in charge of frying in our wok! I always serve with lots of fresh fruit. Yum start to a beautiful Sunday!
