Makeover of Bad Pad Thai!

I already mentioned I got a terrible Pad Thai from a food truck. There were tough, chewy beef bits, no eggs, peanuts or tasted anything like one! I had to completely makeover this dish by adding Lingham's chili sauce to add some spunk & spice. What with the chewy leg of lamb, overhauled Pad Thai, I was getting anxious. I stir fried a simple side dish of bok choy and red peppers. Turned out quite delish, whew!

Grilled Curried Leg of Lamb

Thank goodness there's another portion for tomorrow because this was a killer combination: curry and whole wheat panko smeared on leg of lamb off the bone and grilled!!!

Fiery & intoxicating smell & flavor, WINNER! Whenever you have spicy, need to balance with cool. Spinach salad & cold sesame soba noodles.

Will be posting how to use same cut of lamb in different ways. You can see previous posts where I've stir fried the lamb, grilling is better for this particular cut.

Lamb stir fry, kale, shiitakes, sweet potato

I love eating this way, stir fry lots of veggies and little lamb, little carb. Done in less than 20 mins. The dried shiitake mushrooms are very handy to have around and give your dish an added dimension and flavor. Get different ones so you have choice, they come with tips and instructions how best to use them. Can't go wrong with mushrooms.
