Asian Moussaka to Curry

I turned last night's failure with Asian moussaka into a delicious curry!

This already had all the right ingredients: eggplant, zucchini, bell pepper and ground turkey. All I did was add MySpiceSage.com hot curry powder!

I also make my weekly simple pickle: carrots, cue, radish & red onion, add salt and rice vinegar, that's it. Yin and yang. Hot curry, cooling pickle, winning combo.

Asian moussaka

I had a craving for moussaka last night but wanted a lighter version. I didn't realize this recipe takes 2 HOURS to prepare! Bechamel sauce apart from the meat filling. Yipes, not me. I added too much tomato so the meat filling didn't firm up. It's what a Wok Star does, put my own personal spin on a recipe, gonna adjust it tonight. Poor hubby, it's one of his favorite dishes.

I lightly fried ground turkey marinaded with TSPC (tamari, sherry, pepper, cornstarch) in my cast iron wok. Added canned tomato with little juice, topped with zucchini, eggplant & red bell pepper.

We had it with field greens, tomatoes, radish & walnuts with a light balsamic dressing.
