Turkey, Black Quinoa Bean Soup on a Hot Day

Hot soup is supposed to 'cool' you like drinking hot tea in Summer. Well, it was definitely a summer's day! I love turkey soup with celery, carrots, tomatoes. Instead of potatoes, I added black quinoa to give some texture. First time I've seen black quinoa. I can't waste, so threw in last bit of bean soup, worked out really well. Soup always means toast.

Hearty Soup, toufu puffs

Nice chill tonight, perfect for end of the week to clear my fridge!

I started off wanting soup, had some chicken broth, mushroom juice I soaked my porcinis as base. Put this in my cast iron wok! Perfect vessel to do this.

I knew I was going to cook a few different batches, so a wide area is perfect to scoop out.

Cooked up whole wheat penne & put in two soup bowls.

Added to soup: mui choy leftovers from pork belly, toufu & toufu puffs. Scooped out & put over penne in bowls.

Then added to soup: leftover veggies with eggplant & rapini. Last minute, added in fresh bok choy & scallions.

Poured all veggies & soup over toufu, puffs & penne. Done! Yummy. Comfort food made from leftovers!!!

Light Soup Noodle After Thanksgiving

I used the duck carcass and water I soaked porcini in as soup base, added shredded ginger, dash of sherry, white pepper. Then soba noodles, Shanghai bok choy, Yu choy (cross between choy sum & can't remember what but delish), soy chicken and some seitan.

Pickled jicama, red onion, cue. I love having pickles as a little side dish, perks up your appetite. This little dish is part of the set of my dragon design bowl.

I love this dragon design of my noodle bowl. Did you know that bowls for soup has the rim going slightly outward so it's easier for your lips to slurp your soup? I personally cannot stand that noise though it's common in Asia.

The reason why my body craved a light meaI? I broke Thanksgiving tradition and had store bought Roast Duck, best decision I ever made! Perfect solution to not cooking a complete dinner. Have to say it was pretty rich when you have stuffing, gravy and sweet potato. Thankful it's only once a year!  Here's my Wok Star's Thanksgiving Duck.
