Spicy Vindaloo Breakfast

Spicy Vindaloo leftovers with Methi paratha revs up my morning! Tons to do before I take off to Hong Kong to see my mom.  Growing up, my mom used to serve us curry for breakfast!  She always said curry is better the next day and I so agree, the meat has really absorbed the sauce and even more tasty than last night's Veena's Market Vindaloo with Zucchini Raitha dinner! Uh, hope my hubby doesn't see this, think he was hoping for seconds, oops.

Veena's Market Vindaloo with Zucchini Raitha

My experiment with Veena's Market Vindaloo was a huge success! Pork shoulder was very tender and tasty. If you want to have authentic Indian food at home, Veena's Indian recipe Kits is the answer! Clear instructions with packets labeled a child could follow.

Few mishaps cause not used to following recipes: 1) I didn't realize you have to marinade the pork overnight! 2) I threw the whole packet of chili powder in, oops. Thank goodness I made some zucchini raitha to cool our scorching tongues, not complaining, we loved it and helped clear our sinus. Demonstrating the use of a cast iron wok to fry/sear meats prior to stewing in my clay pot. Stir fried lots of veggies to go with Vindaloo. Enjoyed this meal tremendously. I rushed back from my beach walk, so excited to try.

Grated zucchini, mixed in yoghurt, mint, tiny sprinkle of Gomasio (Japanese black & tan sesame seeds & salt.)

Veena's Curry Kit arrived!

I 'met' Veena through a mutual Korean friend on Facebook. I've always loved Indian cuisine but must admit I'm intimidated by all the spices. I've even taken a few cooking classes and have many cookbooks. Balancing the spices is tricky so I'm eager to try Veena's curry kit. It includes rice and 3 packets of spices and a recipe card with an informative background about the dish, hmmm. Will let you know.
